14 oz Udon noodles
2 tb E tra virgin olive oil
1/4 c Lemon juice
2 tb Lemon zest
1 ts Coarsely ground black pepper
1/2 c Vegetable stock
1/2 c Coconut, grated
2 c Slivered snow peas
1 ts Salt
1/4 c Cilantro, chopped
1/4 c Basil, chopped
Cook udon noodles in salted water according to package instructions, till tender but firm. Drain. Heat 1 tb oil in skillet, add lemon juice, zest, pepper, stock and amp coconut. Bring to a boil. Cover and amp cook over moderate heat for 2 minutes. Add snow peas and amp continue to cook for 1 minute. Remove pan from heat, add drained noodles and amp stir to blend. Season with salt. When cooled, add herbs and amp mi . Drizzle with remaining oil and amp garnish with cilantro.

1 pk Semi sweet chocolate chips (350gr) 1 cn Sweetened condensed milk 1 1/4 c Icing sugar 1 pn Salt 1 ts Vanilla 1/2 c Chopped nuts In heavy saucepan, over low heat, melt chocolate chips with condensed milk stir in remaining ingredients. Spread evenly in wa ed paper lined 8 inch square pan. Chill 2 3 hours or until firm. Turn fudge onto cutting board, peel of paper, cut into squares. Store loosely coved at room temperature.
