1 ea Garlic clove, finely sliced
Zest of 1 orange, cut into small pieces 1/2 tb Fennel seeds
2 c Oil cured black olives
At least several hours before planning to serve them, mi the garlic, zest and amp fennel seeds with the olives. Leave them at room temperature fro several hours, or cover and amp keep in the refrigerator for up to 2 weeks. Serve at room temperature by themselves or as part of an antipasto. NOTE: Avoid using Kalamata olives coz they are too salty and amp California Black Olives coz they are too bland.

3 Whole herrings 2 oz Medium ground oatmeal 1 ea Egg 2 Red apples 1 ea Parsley sprig to garnish 1 Salt and pepper 1 Melted fat or oil to fry Clean and scale herrings, remove fins, wash in cold water. Dry well. Season with salt and pepper. Dip herrings in beaten egg, and coat with oatmeal. Fry in hot fat for 4 5 minutes on each side. Drain well on paper towels and keep hot. Wash apples, core, cut in slices and fry in hot fat for a few seconds, turning once. Serve herrings with apple rings on a hot dish. Garnish with parsley sprigs. Serve with a cider sauce. ...
