1 lb Plum tomatoes, diced
28 oz Can Italian tomatoes,
undrained and amp chopped 1 1/2 lb Stale Italian bread, cubed
5 ea Garlic cloves
1 md Leek, white part only,
washed well, chopped 1 md Onion, finely chopped
1 pn Red pepper flakes
3 1/2 c Vegetable stock
8 ea Basil leaves
2/3 c Olive oil
Salt and amp pepper, to taste Combine all ingredients in a heavy stockpot and stir well. Cover and simmer 45 to 60 minutes, stirring occasionally to prevent sticking. Remove from heat and let stand, covered, 1 hour. The mi ture should be very thick. Before serving, stir the soup well to break up all the bread pieces. Ladle into individual bowls and sprinkle with a little e tra virgin olive oil and salt and pepper. Serve lukewarm or reheat. Health Magazine September, 1993 Posted by Linda Davis

2 c Smoked ham, fully cooked, cu 1 1/2 c Swiss cheese,shredded 1 pk Asparagus,frozen, cut up, th 2 Onions, green, sliced 1 1/2 c Milk 3 Eggs 3/4 c Bisquick 1/4 ts Salt 1/8 ts Pepper Heat oven to 400. Grease pie plate. Sprinkle ham, 1 c. cheese, the asparagus and onions in plate. Beat milk, eggs, baking mi , salt and pepper til smooth, 15 sec. in blender at high speed. Pour into plate. Bake til knife inserted in center comes out clean. 40 45 min. sprinkle with 1/2 c. cheese. Cool 5 min. 6 8 servings. Note: 1 lb of fresh asparagus can be used.(about 2 cups cut up) F...
