8 lg Mushrooms
3 tb Olive oil
3/4 lb Tomatoes, peeled and amp finely
chopped 1 Garlic clove, crushed
1 bn Scallions, thinly sliced
3 tb Chopped fresh chives
Salt and amp pepper to taste 1/2 tb Lemon juice
Pre heat oven to 350F. Wipe mushrooms clean. Remove stems and amp save for another use. Lightly oil baking sheet with 2 tb oil and amp lay mushrooms on it stalk side up. Pour 1/2 ts olive oil over each one and amp bake for 20 minutes. Remove from oven and amp set aside to cool. Combine tomatoes, garlic and amp scallions on a chopping board and amp chop unil reduced to a puree. Put in a bowl and amp stir on the chives and amp salt and amp pepper. Stir in the rest of the oilve oil and amp lemon juice. Fill each mushroom cap and amp serve. Vegetarian Times December, 1991

1 Can biscuits 1 1/2 Lb. corned beef 1 C. chopped onions 1 Pkg. cream cheese (8 oz.) 1 Can cream of chicken or mushroom soup (10 1/2 oz.) 1/2 C. milk 1 Tsp. salt 1/4 C. ketchup 1/3 C. sliced stuffed olives (optional) Brown corned beef and onions drain. Combine cream cheese, soup and milk. Add salt, ketchup and corned beef. Pour into 2 quart casserole. Bake at 375 degrees for 10 minutes. Put biscuits on top and add olive slices.
