3/4 c Butter flavored shortening
3/4 c Sugar
1 ts Lemon peel grated (opt)
1/4 c Lemon juice
1 1/3 c Flour
1/4 ts Salt
1/4 ts Baking powder
1/4 c Coconut shredded (opt)
Preheat oven to 350 degrees. Combine shortening and sugar in medium bowl. Beat at medium speed of electric mi er until light and fluffy. Add lemon peel and amp juice. Blend well. Combine flour, salt and baking powder. Add to lemon mi ture at low speed until just blended.Drop dough by level measuring tablespoonfuls 2 inches apart onto ungreased baking sheet. Sprinkle top with coconut, if desired. Bake for 8 to 10 minutes or until cookies are set and edges are golden brown. Watch closely so that coconut does not burn. Cool 2 minutes on baking sheet before removing to cooling rack. Cool completely.

1 1/3 c Sugar 1 1/3 c Shortening 4 Eggs 2 ts Vanilla 4 c Flour 1 ts Salt 4 ts Baking powder Cream sugar and shortening together until creamy. Add vanilla and eggs, mi ing well. In a separate bowl, mi together flour, salt and baking powder. Add wet ingredients, mi ing well. Place teaspoonfuls of dough on ungreased cookie sheet and bake at 350 F. for 10 12 minutes or until just barely browned.
