8 oz Firm silken tofu
1/4 c Apple juice
1 c Wholewheat flour
1/2 c Rye flour
1/2 c Wheatgerm, toasted
1 ts Baking powder
1 ts Baking soda
1/4 ts Salt, optional
1/4 ts Sesame seeds, toasted
Preheat oven to 450F and amp oil cookie sheets. Blend tofu until smooth and amp blend in the apple and amp lemon juices. Transfer to a medium sized mi ing bowl and amp set aside. Sift together remaining ingredients, e cept the sesame seeds. Fold flours and amp seeds into tofu mi ture. Turn out onto a lightly floured board, roll out dough to 1/2 thickness, cut with cookie cutter and amp bake for 12 minutes. Serve immediately.
