1 Mi and Match Bean Mi
recipe 1/2 ts Salt, seasoned
1/4 ts Kitchen Bouquet, if desired

In a 3 quart saucepan combine beans from bean mi and 7 cups water. Bring to boiling reduce heat. Cover
simmer for 2 minutes. Remove from heat. Let stand, covered, 1 hour. (Or, soak overnight in a covered pan.) Drain and rinse beans. To beans, add 6 cups fresh water and seasonings from bean mi . Bring to boiling reduce heat. Cover simmer for 1 1/2 hours. Add 1/2 tsp seasoned salt. Stir in 1/4 tsp Kitchen Bouquet if desired. Return to boiling
reduce heat. Cover simmer for 30 minutes more or until beans are tender. Remove from heat. Place about 2 cups bean mi ture in a blender coontainer. Cover blend until smooth. Return blended mi ture to saucepan heat through. Makes 6 to 8 servings. From the files of DEEANNE

2 lb Chicken, boned 1/2 c Bread crumbs 1 t Salt 1/8 t Pepper 2 ea Eggs, beaten 1/2 c Parmesan cheese 1 t Oregano 1 c White wine 3/4 c Salad oil Pound chicken till thin. Pat dry and cut into pieces. Combine bread crumbs, parmesan cheese, spices and salt. Set aside. Beat eggs in a shallow dish. Dip chicken into egg, then into the crumb mi ture, coating both sides. Heat oil in skillet. Saute' chicken until brown about 3 minutes each side. Remove to a warm platter. Drain fat, Stir in wine scraping up brown residue until boil. Pour over chicken. ...
