1 c Whole peas, soaked
4 c Stock
1 lg Carrot, halved
2 tb Tarragon
Salt and amp pepper Drain the soaked whole peas. Cover with stock in a large pot and amp add the carrot. Bring to a boil and amp boil hard for 10 minutes. Reduce heat, cover and amp simmer for 1 hour or until the peas are tender. Add the tarroagn and amp simmer for 5 minutes. Stir in the salt and amp pepper. Remove from the heat and amp let cool for a few minutes. Puree until smooth. Return to the pot to heat through. Check the seasonings and amp serve.

None Choose nice firm artichokes that are not turning brown or looking dry. (I like to serve one artichoke per person.) Cut off the stems even with the bottom of the artichokes. Cut about an inch off of the top of the artichokes straight across the tops of the leaves.
