1 cn Pinto beans drained, rinsed
2 tb Me ican Spice Mi
(below) 2 Carrots cut in 2 chunks
1/2 c Zucchini cut in 2 chunks
2 cn Low sodium tomato sauce
Me ican Spice Mi 5 ts Cumin
5 ts Chili powder
2 1/2 ts Black pepper
5 tb Minced onions, dried
5 tb Minced garlic, dried
2 1/2 ts Salt

Me ican Bean Stew: Combine pinto beans, seasoning mi , vegetables, and tomato sauce in a sauce pan. Add enough water to achieve desired consistency. Simmer covered for 30 60 minutes. Serve hot. Me ican Spice Mi : Combine spices and store in a covered bottle. Use 3 T mi for every 1 cup of dried beans. Adapted from Recipes to Lower Your Fat Thermostat, by LaRene Gaunt

10 oz Fresh spinach or 12 oz froz 2 Eggs well beaten 1 c 2% milk 1/3 c Celery chopped 1/4 c Onion chopped 2 tb Parmesan cheese grated 1/2 ts Salt 1/2 ts Nutmeg Wash fresh spinach and discard stems. Steam in a covered saucepan over low heat until the leaves are wilted. Drain in a colander or sieve, press out liquid and chop spinach. (OR Thaw frozen chopped spinach and press out liquid.) Mi remaining ingredients together, then fold in spinach. Pour mi ture into a well greased 9 inch pie plate. Bake at 375 F for 45 minutes or until a knife inserted in the middle...
