Very Veggie Chili

Amount Measure Ingredient Preparation Method 3 tablespoons vegetable oil
3 stalks celery
1 large onion chopped
1 large green pepper choppped
8 cloves garlic chopped
4 14.5oz cans Me ican style stewed tomatoes
2 16oz cans pinto beans, drained
1 15oz can hominy, drained
1 11oz can whole kernel corn, drained
1 4oz can diced green chilis
1 cup fresh cilantro chopped
1/4 cup chili powder
1 tablespoon ground cumin

Heat oil in heavy Dutch oven over high heat. Saute celery, onion, bell pepper and amp garlic until they begin to soften...about 8 minutes. Add all remaining ingredients e cept cilantro and amp simmer, about 35 minutes. During last 10 minutes, add cilantro.

8 Lasagna noodles 6 c Spaghetti sauce (commercial, or homemade) 1 1/2 c Shredded mozzarella cheese 1/4 c Freshly grated parmesan cheese Cook lasagna noodles according to package directions. Drain, and rinse with cool water, set aside. In bottom of greased 11 7 inch baking dish,spread about 3/4 cup sauce. Spread about 1/2 cup sauce on each lasagna noodle. Carefully roll each one up and place, seam side down, in baking dish. Top with remaining sauce. Cover and bake in 350 F oven for 45 minutes or until hot and bubbly.
