1 lb Huitlacoche
3 tb Peanut oil
1/4 Onion, med finely chopped
1 Garlic clove peeled and amp
finely chopped 2 Chiles poblanos, small
1 Epazote sprig large
(Me ican wormseed) 1/4 ts Salt
Roast and peel the chiles poblanos, then devein and cut into strips. Cut the fungus from the corn cobs and chop it roughly. Set aside. Heat the oil and cook the onion and garlic, without browning, until they are soft. Add the chile strips, huitlacoche, epazote, and salt and cook over a medium flame until the mi ture is soft and the liquid from the fungus has evaporated about 15 minutes. 2 c Low Fat Yogurt 1/2 ts Dried Thyme Leaves 1/2 ts Dried Basil Leaves 1/2 ts Salt 1/4 ts Fresh Ground Pepper Stir all ingredients together gently in a small bowl until blended. Line a sieve with a double layer of cheesecloth or paper towels. Place sieve over a bowl, allowing at least 2 inches between bottom of sieve and bottom of bowl. Spoon yogurt mi ture into sieve and place bowl with sieve in refrigerator. Let yogurt mi ture drain in refrigerator about 4 hours for soft cheese or 8 hours for firmer cheese.
