4 lb Miniature Me ican tomatoes,
washed and amp deseeded 12 ea Shallots, chopped
1/3 c Water
1/3 c Cucumber, minced
1 t Salt
1/4 ts Black pepper
1/3 c Corn flour

Place tomatoes in a large saucepan, add the shallots and amp water and amp simmer for 30 minutes, stirring gently on occasion. Add the cucumbers and amp salt and amp pepper, simmer for 10 minutes, stirring, until the tomatoes break up. Quickly add the corn flour, 1 tablespoon at a time, stirring slowly. Simmer for 5 minutes and amp serve.
