1/2 lb Firm tofu
1/4 c Red onion, sliced
1 ea Green onion, chopped
1/4 c Mint leaves, chopped
2 lb Assorted vegetables, chopped
2 tb Soy sauce
2 tb Lime juice
1/2 ts Ground toasted rice
1 tb Ground roasted chilies
Cut the tofu into cubes. Set aside on paper towels to drain. Heat a wok and amp add the tofu without oil. Stir fry until heated through, but not crisp. Put in a mi ing bowl. Add all the remaining ingredients e cept the assorted vegetables and amp lettuce. Mi thoroughly. Line a serving bowl with a layer of lettuce leaves and amp pour the saute over them. Serve surrounded by rice and amp assorted vegetables. Heat uncooked rice over moderate heat until golden, stirring to prevent burning. When the colour is uniform, remove from heat, cool and amp gring to a powder. It is best to use a mortar and amp pestle. Roast whole chilies, stems too, in a dry wok until they darken. Be careful that they do not burn. Cool. Remove stems and amp seeds. Grind.

2 c Unsalted popped corn 3 Egg whites 1/2 ts Baking powder 1/4 ts Salt 1/4 ts Cream of tartar 2 tb Granulated sugar replacement Place popped corn in food processor or food grinder. Grind into kernel size pieces. Beat egg whites until frothy and add baking powder, salt and cream of tartar. Beat into stiff peaks. Add sugar replacement, beating until well blended. Fold popcorn pieces into stiffly beaten egg whites. Drop by teaspoonfuls onto lightly greased cookie sheets. Bake at 350 F for 12 to 14 minutes or until lightly browned. Yield 36 cookies.
