2 c Frozen diced or shredded
potatoes 1/2 c Chopped onion
1/4 md Green bell pepper, cut into
1 thin strips 1/4 md Red or yellow bell pepper,
cut into 1 thin strips 2 t Oil
1 cn SPAM Luncheon Meat, cut into
julienne strips (12 oz) 1 cn Frozen fat free egg product,
thawed, OR 4 Eggs
1/4 t Dried basil
1/8 t Salt
1/8 t Pepper
6 dr Hot pepper sauce
1/4 c Shredded Cheddar cheese
In large non stick skillet, cook potatoes, onion, and peppers in oil over medium high heat 5 minutes, stirring constantly. Add SPAM cook and stir 5 minutes. In small bowl, combine egg product, basil, salt, pepper, and hot pepper sauce blend well. Pour over mi ture in skillet. Cover. Cook over medium low heat 8 12 minutes or until set. Sprinkle with cheese remove from heat.
