3 cans black beans rinsed and drained
2/3 cup onion finely chopped
1/4 cup red bell pepper finely chopped
1 tablespoon jalapeno pepper finely chopped
1 teaspoon ground cumin
3 tablespoons sesame seeds roasted
1 tablespoon lime juice
1 teaspoon salt
1/2 teaspoon peppr
2 tablespoons vegetable oil

In large bowl, mash beans until most are smooth, leaving some intact. Add onion, bell pepper, jalapeno pepper, cumin, sesame seeds, lime juice, salt and pepper mi well. Divide mi ture into 8 equal patties about 3 1/2 inches in diameter. In large heavy frypan, heat oil over medium low heat. Cook patties, in batches, for 8 10 minutes or until lightly browned, tuning once and adding more oil if necessary. Carefully remove burgers from frypan to platter and tent with foil. Let stand 5 minutes before serving.
Makes 8 burgers.
