1 pk Unflavored gelatin (1 env)
1/4 c Cold water
1/2 c Boiling water
2 c Fresh blueberries (rinsed)
1 ts Lemon juice
2 tb Granulated sugar replacement
2 Egg whites (beaten stiff)
6 Fresh strawberries(optional)
Sprinkle gelatin over cold water in mi ing bowl set aside 10 minutes to soften. Add boiling water and stir to completely dissolve. (If gelatin does not dissolve completely, heat slightly.) Set aside. Combine blueberries, lemon juice and sugar replacement in mi ing bowl or food processor and whip into a puree. Stir completely into gelatin mi ture. When blueberry mi ture is cool, thick and syrupy, beat until frothy. Fold stiffly beaten egg whites into blueverry mi ture. Spoon into 6 serving dishes refrigerate until set. Before serving, top with fresh strawberries. 1 serving 1/3 fruit calories 18

1/2 c Almonds 1 tb Syrup, maple 2 c Water Use raw almonds. Place almonds in blender and grind to fine powder. Add syrup and 1 c water. Blend 1 2 minutes until smooth. With blender running on high, slowly add remaining water. Blend 2 minutes. Place strainer over large bowl. Line with cheesecloth (not 100% neccessary, but recommended. Otherwise strain twice with very fine strainer.) Pour almond milk slowly into strainer and let filter through. When all milk has passed through strainer, press remaining milk out of accumulated almond fiber. Each serving will be appro imately 1 1/4 cups...
