2 lb ground chicken meat
1/2 teaspoon white pepper
1/2 teaspoon salt
2 tablespoons cornstarch
1 tablespoon soy sauce
2 egg whites
1/2 teaspoon ground ginger (fresh if possible)
2 tablespoons dry sherry or rice wine
4 cloves garlic crushed
coating 1 cup cornstarch
1 cup flour
4 cups peanut oil for frying

Mi the chicken with all of the seasonings and egg whites. Mi it very well. Form into balls about the size of large walnuts and set on wa ed paper. When all are formed, mi the cornstarch with the flour and roll each ball in this mi ture. Deep fry in several batches in 360 degree oil until the balls float and are golden brown in color, about 5 minutes. Taste one to be sure they are done to your liking.
