1 c Butter
2 1/2 c Flour
1 1/2 c Sugar
2 Eggs
1 oz Red food coloring
1 ts Water
2 ts Cocoa
1 ts Salt scant
1 ts Baking soda
1 ts Vanilla
1 c Buttermilk
1 ts Vinegar
Cream butter and sugar, add eggs and beat well add food coloring and water. Sift flour, salt, soda and cocoa together and add to creamed mi ture with buttermilk and vanilla. Add vinegar (fold in lightly). Grease and flour 2 9 inch cake pans. Bake at 350F for about 30 minutes.
Here's a good frosting for this cake: CREAM CHEESE FROSTING 8 oz cream cheese, at room temperature 1/2 stick (1/4 cup)
butter, softened 2 c confectioneres' sugar, sifted if lumpy 1 tsp vanilla e tract Combine the cream cheese, butter,
confectioners' sugar and vanilla in a mi ing bowl. Beat well, or process until perfectly smooth and spreadable. You will have enough to fill and frost cake.

1 Sleeve saltine crackers 1 c Butter or oleo 1 c Light brown sugar 1 lg Chocolate morsels 1 c Chopped pecans Spray a jelly roll pan with cooking spray. Line pan with whole saltines. In a saucepan boil butter and brown sugar, stirring well, three to five minutes. Pour mi ture over saltines. Bake 12 minutes at 350 degrees. Remove from oven. While hot pour chocolate morsels over and spread evenly. Sprinkle with nuts and press into chocolate. Refrigerate until mi ture hardens. Break up into pieces. Store in refrigerator or freezer.
