2/3 c Molasses
1/3 c Butter melted
2 Egg yolks
1 c Buttermilk
2 c All purpose flour
1/2 ts Baking soda
2 ts Baking powder
2 ts Cinnamon
1 ts Ginger
1/2 ts Nutmeg
1/2 ts Salt
1/2 c Crystalized ginger chopped
2 Egg whites beaten stiff
Combine the molasses, butter and egg yolks and whisk with fork until smooth. Blend in the buttermilk. Sift together the flour, baking soda, baking powder, cinnamon, ginger, nutmeg and salt into a mi ing bowl. Stir in the crystalized ginger. Make a well in the center of the dry mi ture and add the molasses mi ture, beating quickly until smooth. Fold in the egg whites. If the batter seems too thick, add a little more buttermilk. Bake in your waffle iron until a dark golden brown. Makes 4 big, thick waffles.
