1/3 c Butter
1/2 c Fresh mushrooms (any type)
1/2 c Finely chopped onion
2 tb Dry sherry or vermouth
3 oz Cream cheese softened
1/4 c Minced fresh parsley
In a fry pan, melt butter over med. heat, add mushrooms and onions. Cook until mushrooms are browned (10 15 min.), stirring often. Mi in sherry. Remove from heat,set aside. In a bowl, beat cream cheese and parsley until blended, and then add mushroom mi ture. Blend. (If you want the pieces of mushroom, just stir. I like to Cuisinart in, so it's the same consistency as pate.) Refrigerate, and serve with breads or crackers. Posted by Debi of Delectables by Debi Custom Catering (NRPC58B)

2 1/2 c Pineapple, finely chopped, cored, pared, fresh 1 ts Grated orange peel 2 1/2 c Chopped orange pulp 7 c Sugar 1 1/2 qt Stemmed strawberries Combine pineapple, orange peel, pulp and sugar. Bring slowly to boiling, stirring occasionally until sugar dissolves. Cook rapidly 15 minutes. Add strawberries and continue cooking rapidly until thick, about 20 to 30 minutes. As mi ture thickens, stir frequently to prevent sticking. Pour hot, into hot jars, leaving 1/4 inch head space (6mm). Adjust caps. Process 10 minutes in boiling water bath. Yield: about 6 half pints (1440 mL)...
