1 tb Wine vinegar
1 tb Lemon juice
1 ts Dijon mustard
1/4 c Olive oil
1 ts Garlic (heaping) or
2 lg Garlic cloves fine chopped
Salt and amp freshly ground pepper Torn lettuce to serve 4 1 lg Tomato, seeded and amp chopped, or
2 sm Tomatoes
1/4 c Fresh chives chopped
Salt and pepper 1/2 c Walnuts toasted
2 tb Grated Asiago cheese or
Fresh Parmesan cheese Use up to 3 tb. of cheese, according to taste. In a bowl or blender, combine vinegar, lemon juice and mustard. In a small skillet, heat olive oil. Add garlic saute until just golden. Gradually whisk in the vinegar mi ture, blending thoroughly. Add salt and pepper to taste. 8 Lasagna noodles 6 c Spaghetti sauce (commercial, or homemade) 1 1/2 c Shredded mozzarella cheese 1/4 c Freshly grated parmesan cheese Cook lasagna noodles according to package directions. Drain, and rinse with cool water, set aside. In bottom of greased 11 7 inch baking dish,spread about 3/4 cup sauce. Spread about 1/2 cup sauce on each lasagna noodle. Carefully roll each one up and place, seam side down, in baking dish. Top with remaining sauce. Cover and bake in 350 F oven for 45 minutes or until hot and bubbly.
