1 md Onion, chopped
1/2 c Celery
2 tb Flour
1 md Green pepper
1/4 c Fresh parsley
1/4 ts Pepper
3 c Cooked chicken
1/4 c Margarine
1 tb Medium curry powder
14 oz Tomatoes/ ground tomatato
1 ts Salt
1 1/2 c Chicken stock
1/3 c Raisins
I use bovril packets Chop onion, seed and amp dice pepper, chop celery and dice chicken. Saute onion and amp celery in marg in large shallow pan. Saute til onion is soft, about 5 minutes. Stir in curry and flour, cook 1 minute. Add tomatoes, and green pepper, cook stirring often for 5 minutes. Stir in parsley, salt, pepper and amp broth. Lower heat and simmer for 10 minutes. covered. Add chicken and raisins heat through and serve over cooked rice.
