1/2 c Butter or shortening
3 lg Eggs
1/2 c Unsweetened frozen pineapple
Juice concentrate, thawed 1/2 c Water
2 1/2 c White flour
1 ts Baking soda
1 ts Baking powder

In a large mi ing bowl beat together butter (or shortening), eggs, pineapple juice concentrate, and water until thoroughly blended. Add flour, baking soda, and baking powder beat just until blended.
Spoon mi ture evening into a 9 5 oiled and floured loaf pan. Bake in a preheated oven at 350 degrees for 45 minutes or until knife inserted comes out clean. Cool on a wire rack.
